PB Banana Pancakes


I love food. A lot.

So in an effort to be healthy, I like to play around in the kitchen and try new recipes for some of the carb-loaded favorites I grew up with, like pancakes, breads, bagels, pizza, etc...

But it's beyond frustrating to crave a pancake and end up with something that tastes like hot garbage. So I messed around a bit and came up with this recipe. Don't imagine it to be fluffy and buttery. It's not. But it IS tasty. And nutritious. So I'll take it.

And it only took 10 minutes to make. Plus, I cut up an entire cantaloupe while they cooked so now I have snacks for the next few days.

And since no one else in my house will eat my "cardboard replacement fake food", this also made me breakfast for tomorrow. Recipe below.

PB Banana Pancakes

Makes 2 servings

1 very ripe banana, mashed

1 egg

1/2 tsp baking powder

1/2 tsp vanilla

1/2 tsp cinnamon

2 tbsp almond meal

1 tbsp blind spot nut butter (I used cake batter)

1 tbsp unsweetened vanilla almond milk

1/2 tbsp coconut oil (you could use non-stick cooking spray as a replacement)

1 tbsp pure maple syrup or agave

mix everything together in a small bowl except the coconut oil and maple syrup.

Heat the coconut oil on a non-stick griddle over medium-low heat.

drop batter by 1/4 cup on the heated griddle - makes 4.

flip when you see the little bubbles across the top and edges start to look dry.

cook a few minutes longer, then serve 2 with 1/2 tbsp of syrup and try to enjoy!

I put the ingredients into the livestrong tracker to determine there are 271 calories in a serving.
